We’ve also adjusted the cooking time for the steaks to ensure they’re well-done, which is safer for you to eat during pregnancy.

Serves:
Time: 25 minutes cooking
Good for: Protein, fibre, iron, zinc, omega-3 and omega-6 fatty acids and Vitamin K 

Ingredients

16 small red potatoes
Salt and pepper
3 tbsp olive oil
4 small steaks (such as sirloin, top round or Newport; about 1½ lb total)
2 scallions
¼ cup fresh dill
2 tbsp white wine vinegar
1oz feta cheese 

Method

• Place the potatoes in a large pot, add enough cold water to cover and bring to the boil. Add 2 teaspoons of salt, reduce heat and simmer until just tender for 15-18 minutes. Drain and run under cold water to cool. Cut the potatoes in half.
• While the potatoes are cooking, heat 1 tablespoon of the oil in a large skillet over a medium-high heat. Season the steaks with ½ a teaspoon each of the salt and pepper and cook until well-done.
• In a large bowl, combine the scallions, dill, vinegar, remaining 2 tablespoons of oil and ½ a teaspoon of each salt and pepper. Add the potatoes and toss to coat. Fold in the feta and serve with the steak.
