Will it be Murray or Federer? Watson or Williams? Who cares! Let’s eat cheesecake!
What better way to enjoy the Wimbledon Tennis Championships than with the classic strawberries and cream? We’re loving this ever-so-slightly indulgent cheesecake recipe by senior food editor for BBC Good Food Cassie Best.
Not only does it have the perfect ingredients for the tournament, but one of them is a pregnancy superfood! Full of vitamin c, folic acid and potassium, strawberries are also great for boosting iron absorption.
Enjoy!
Serves: 8
Time: 20 minutes prep
Good for: Folic acid, vitamin C and potassium
Ingredients
200g buttery biscuit (Cassie used Fox's Butter Crinkles)
200g cream cheese
200ml double cream
6 tbsp icing sugar
2 tsp vanilla extract
500g strawberry, halved or quartered
Method
• Blitz the biscuits to crumbs in a food processor or in a bowl with the end of a rolling pin. Divide the biscuit crumbs between eight jars.
• In a large bowl, whisk the cream cheese, cream, 5 tablespoons icing sugar and the vanilla extract until softly whipped. Tip half the strawberries and the remaining sugar into another bowl and crush with a fork to a purée. Ripple the purée through the cream and divide between the jars. Top each cheesecake with remaining strawberries, secure the lids and chill until ready to pack up. Transport in a cooler bag.
And that’s that! Enjoy!
