Spinach And Walnut Salad With Cheese Dressing 

Popeye’s not the only one who benefits from a generous helping of spinach. The delicious dark veg is full of vitamins and nutrients and has even been found to promote eye health! Turns out the sailor man really was onto something… This recipe also includes walnuts, which are also great for pregnancy.

Serves: 4
Time: 10 minutes prep
Good for: Vitamins A, C and K, folate, protein, fibre and omega 3 

Ingredients

75g hard cheese (the original recipe calls for blue cheese, which is unsafe to eat during pregnancy, so substitute it for your favourite hard cheese)
4 tbsp crème fraîche
100g baby leaf spinach
50g walnut pieces 

Method

• Mash the cheese of your choice, crème fraîche and some seasoning in a bowl with 50ml water until smooth and pourable.
• Put the spinach onto a serving plate, scatter over the walnut pieces and drizzle with the cheese dressing.
